Carrot Cookies

I remember Mom’s cookie jar always had some cookies in it.

  • 1 C.  shortening
  • ¾ C. sugar
  • 1 C. cooked, mashed carrots
  • 2 C. flour
  • 1 t. soda
  • 1 egg
  • 1 t. vanilla

Cream shortening, sugar and carrots. Add egg, vanilla, and dry ingredients. Mix well. Drop by spoonfuls on a greased baking sheet. Bake at 350 for 8-10 minutes. When cool frost with juice and grated rind of one orange mixed with ½ box powdered sugar.

    I remember the first place I headed for was the kitchen, the far right side under the dishes where she kept that cookie jar. My two favorites were the Chocolate Chip and the Oatmeal Raisin. David Morgan and I woud go hickory nut hunting in the woods behind Hickory Grove School house and bring them home to Mom. Then she would add to the raisins and oatmeal hickory nuts that David and I picked for her. We knew which ones to find on the ground that had fallen off the trees. Walnuts were better and when she could afford those she’d add those instead. It was a bare existence but Mother made it one filled with love, warmth, and caring. Judi
