Curried Fruit Compote

Ingredients: 1 large can halved peaches, pears, pineapple chunks, and apricots.

Drain all fruit and lay cut side down in 9” X 13” or larger flat pan

Add a few Marchino cherries to add color.

Sauce:

  • ½ cup brown sugar
  • 4 T. butter
  • ½ t. curry powder
  • ½ t. ginger
  • 2 t. lemon juice
  • 1/3 cup pineapple juice.

Heat ingredients to melt butter and brown sugar and pour over fruit.

Bake 350 deg. For 30 minutes and serve warm and enjoy.
