Edna’s Christmas Date Roll Cookies

Makes 36. Bake at 350 for 10 minutes.

  • 1 C.  White sugar
  • 1 C. brown sugar
  • 2 sticks margarine or butter
  • 3 eggs
  • 4 C. flour
  • 1 t. soda
  • 1 t. vanilla
  • ¼ t. salt

Mix all and chill. Spread date filling over dough after you have rolled dough out into 2 rectangles.  Dust rolling board with flour if necessary.  Roll like a jelly roll, and start with the longest side. Chill and slice ¼ inch thick. Bake 350 degrees for 10 minutes.

For date filling, cook until thick:

  • ½ C. nuts
  • ½ lb. chopped dates
  • ½ C. sugar
  • ½ C. water.
