Scandanavian Salad

  • 1 pkg. frozen petite peas
  • 1 can french style green beans
  • 1 stalk celery, cut fine
  • 1 red sweet pepper, chopped
  • 1 small onion, sliced

Mix ¼ C. vinegar, 2 T. olive oil, and 2 T. honey. Pour over vegetables. Let set 24 hours, drain and serve.

    Since Chris’ mother is Danish and so is Chris I’ve had this salad prepared by her at one or two of our many family dinners. It’s yummy and everyone should try it. Your sister, Judi
