Great side dish for mexican theme.
- 2c Rice Cooked
- 1 small onion & 2T butter – sauteed and added to rice
- 3 – 4 oz cans Green Chiles, chopped
- 1 lb Monterey Jack Cheese
- 1 c. Sour Cream
- 2 c. Sharp Cheddar, shredded
Layer 1/2 rice mixture (butter, onion, rice), then 1/2 green chiles, 1/2 MJ cheese, 1/2 sour cream — repeat layers and top with sharp shreds. Bake at 350 for 20-30 minutes.
